Abstract

The main objective of this research was to evaluate the effect of the cooking and baking temperature on the content of iron, zinc and β-carotenes in the stuffing of sweet potato puree (Ipomoea batatas) biofortified, used in a food bar, in order to see how much thermal processes affect the final product. For this, the raw material to be used was selected, which was donated by the Institute of Agricultural Sciences and Technology -ICTA-, who provided the variety of sweet potato biofortified with β-carotenes, iron and zinc (ICTA Dorado), released in the year 2016. Initially, a bromatological analysis was made to this variety to verify the contribution of the plant breeding technique to which it is subjected to improve its nutritional characteristics, among others. The results revealed that the only nutrient that benefits from this technique is iron, otherwise with the β-carotenes and zinc, which when comparing the results (raw) with the nutritional tables of the common orange sweet potato (crude without biofortifying ) according to data from the Institute of Nutrition of Central America and Panama -INCAP- published in 2016, the variety of raw biofortified sweet potato does not comply with the approximate nutritional content of common raw sweet potato. El objetivo principal de esta investigación fue evaluar el efecto de la temperatura de cocción y horneado en el contenido de hierro, zinc y β-carotenos del relleno de puré de camote (Ipomoea batatas) biofortificado, utilizado en una barra alimenticia, con la finalidad de ver qué tanto afectan los procesos térmicos en el producto final. Para ello se seleccionó la materia prima a utilizar, la cual fue donada por el Instituto de Ciencias y Tecnología Agrícola –ICTA-, quienes proporcionaron la variedad de camote biofortificado con β-carotenos, hierro y zinc (ICTA Dorado), liberado en el año 2016. A dicha variedad se le realizó inicialmente un análisis bromatológico para verificar el aporte de la técnica de fitomejoramiento a la que esta es sometida para mejorar sus características nutritivas, entre otras. Los resultados revelaron que el único nutriente que se beneficia de esta técnica es el hierro, caso contrario con los β-carotenos y el zinc, los cuales al comparar los resultados (en crudo) con las tablas nutricionales del camote anaranjado común (crudo sin biofortificar) según datos del Instituto de Nutrición de Centroamérica y Panamá –INCAP- publicados en el año 2016, la variedad de camote biofortificado crudo no cumple ni con el contenido nutricional aproximado del camote común crudo.
