Abstract

SUMMARY The research project carried out at plant Palo Gordo during the 2018-2019 harvest was based on the analysis of the variables of trash and phenolic compounds, with the purpose of identifying if both affected the color of the juice of the cane crop. The research was conducted in a general way taking into consideration the different varieties of cane used in plant Palo Gordo, collecting 97 representative and random samples of the cane that entered. The execution of the analyzes was carried out consecutively, beginning with the determination of the amount of trash by means of the method of selection and weighing of components. Once the juice of the cane was extracted, the Phenol Folin-Ciocalteu Method was applied with the purpose of obtaining the concentration of phenolic compounds present in said juice, also, the spectrophotometry technique is used to obtain the color data of the juice extracted. The acquired data were subjected to a simple statistical correlation analysis, resulting in the ratios of phenolic compounds / color and phenolic compounds / trash coefficients of 0.0464 and 0.1176 respectively, figures that show that there is no correlation between the variables. While for the ratio between trash / color the correlation coefficient is 0.3060 which indicates that it has a weak positive correlation. The aforementioned allows us to establish that the relationship between the study variables on the color of sugarcane juice is not significant.
