Abstract
Abstract To determine the peroxide index of an animal fat under storage conditions, analyses were conducted on the stored raw materials, taking place at intervals of three times a week. In the raw material reception area, analyses were carried out whenever there was a need to supply beef tallow for the production of balanced animal feed. Of the fifty samples analyzed over a sixty-day period, the results showed that 100% were within the parameters set by the technical standard CODEX STAN 19 1981 (Rev. 2-1999) for the determination of peroxides. These findings were compared to the maximum allowable values of 10 mEq of oxygen per kg of fat. Additionally, it was determined that 56% of the samples remained within a range of (3 – 5) mEq of oxygen per kg of fat for thirty-five days, during which no quality complaints were made. The remaining 44% showed an increase, falling within a range of (6 – 8) mEq of oxygen per kg of fat, where quality complaints related to peroxides were reported.
