Abstract

ABSTRACT The massive consumption of fritters has been increasing. The National Survey of Income and Family Expenditures for 2009-2010 showed that a third of Guatemalans buy food outside the home. The main objective of this study is to identification, whether sales of fried chicken in the urban center of Tiquisate, Escuintla use oils suitable for human consumption; using physicochemical analysis methods such as: acidity index, peroxide index, p-anisidine index and totox index. In order to establish the bases of this study, pilot surveys were carried out in the National Hospital of Tiquisate, Escuintla, where it was possible to identify that the inhabitants consumed most of them; Fried chicken, fried gizzards and French fries, at least once a week. It was also observed that the consumption of these foods has been an important factor for the development of chronic noncommunicable diseases that is scientifically proven according to FAO and WHO. Two types of analysis were performed; as primary analyzes acidity indexes and peroxide indexes; and as secondary analyzes p-anisidine index and totox index, verified under the Codex Alimentarios standards, using the methodologies of the AOCS (American oil Chemists'Society) with the objective of identifying if the oils are suitable for human consumption according to the established parameters. The results of this investigation, it was idicate that 99% of the samples are not suitable for human consumption.
